I rode this weekend trip with my local Triumph club in July 2006. The outbound route uses the Holyhead/Dublin ferry and heads north up the coast crossing into Northern Ireland. Over the Mourne mountains and around Stangford Loch and into Belfast. Other highlights include the A2 Antrim coast road calling in at the famous rope bridge, Giants Causway and Bushmills distillery. The return route uses the Belfast to Stranraer ferry and a ride through the Galloway Forest National Park before hitting the M6 for the homeward leg. The whole route passes through five countries! It's a great ride and will give both first time and seasoned visitors the full flavour of Ireland. If time permits I would recommend extending the route further around Northern Ireland to the West coast; which is one of my future plans.
